Chicken Parmesan Made-Over

My husband is so wonderful! He is also losing weight and has been such a help to me on this journey. I love that we are changing our lifestyles together! Tonight while I was at my Weight Watchers meeting, I left him with a recipe I pulled from Skinny Taste, which as become one of my FAVORITE websites! This is the same website that I got my New Year's day meal, spinach dip, and the idea for my shrimp dinner last night. Gina, who is the blogger, is fabulous and not only posts easy to read recipes that are delicious but she also includes all of the nutrition information and WW PointsPlus!! I just love her blog and it is a wonderful resource to use when trying to cook healthy meals!



Check out the pictures of the YUMMY Baked Chicken Parmesan that Shawn made tonight for dinner. We did change a few things by using Organic Panko breadcrumbs and organic low-fat marinara sauce, both from Earth Fare. We put this yummy piece of chicken along side of freshly cooked broccoli. A perfect pair!

Also, a good piece of advice, always cook several extra so you have some to take the next day for lunch! You are killing two birds with one stone. :)
